I enjoy Tool's cover of No Quarter, I'm also quite partial to APC's cover of Imagine.

Some other good ones:

Stevie Ray Vaughan's cover of Voodoo Child by Jimi Hendrix

Johnny Cash's covers of Rusty Cage by Soundgarden and Hurt by NIN

Rage Against The Machine's cover of Maggie's Farm by Bob Dylan

Pearl Jam's cover of Rockin' In The Free World by Neil Young

Nightwish's cover of Symphony of Destruction by Megadeth

I love everything these artists have covered:

The Black Keys

Free

Led Zeppelin

Mariah Carey

Generally I don't like covers because they're usually great songs butchered, but theirs are great. Another great one is Ryan Adams' rendition of Oasis' 'Wonderwall'. Love it.

Band Of Joy- Hey Joe, For What It's Worth (Hendrix, Buffalo Springfield)

Hendrix' version is actually a cover, it was originally done by a band called The Leaves. While it's clear it's definitely not a Hendrix original, there does seem to be some dispute over the authorship of the original version:

I generally love most anything The Greenhornes cover, particularly "Mary Anne With The Shaky Hand" (originally The Who) and "Lost Woman" (Yardbirds).

The White Stripes' cover of The Soledad Brothers' "St. Ides of March" blows the original away.

The Black Keys' cover of "Have Love Will Travel," generally the version done by The Sonics but originally written by Chuck Berry.

The Gun Club's cover of "Preachin' Blues" by Robert Johnson... good lord.

HOWEVER, I'm pretty sure the greatest cover ever is The Jimi Hendrix Experience covering "All Along The Watchtower." Bob Dylan's is amazing, no doubt, but MY GOD, the JHE takes it above and beyond.
